After reading through Byrne’s Superman and seeing him having to use his heat vision and a mirror to shave I was wondering do Thor and Hercules and maybe even Wonderman have the same issues with regular scissors and razors?

Don't recall it ever coming up, at Marvel, beyond this..... ...from What If...? #34, where Crazy takes over and they do an entire issue of parodies and one panel gags. Other than that, Simonson did have Thor grow a beard.

Hercules shaved off his mustache and beard in The Avengers #46 using an ordinary razor so Olympian hair, at least, is clearly not invulnerable.

There should be a story where Thor keeps bothering Medusa for advice about keeping his 'do looking good.

This is from the MCU versus the comic books, but I'm reminded of how Thor's hair was cut off during Ragnarok. It was written into the storyline as the Grandmaster enslaving Thor as a Gladiator, and of course a classic Stan Lee cameo as the "barber".
While Chris Hemsworth still cut a fine figure with the shorter hair (and reportedly much preferred it to the cumbersome wig he had been wearing), I do feel like he lost a bit of the epic look he had previously. But visual aside, there was some fan conjecture that Stan's hair cutting device must have been very powerful because Thor had also been exposed to the force of a star at the forge on Nidavellir and his hair was unscathed.

All I'll say is that invulnerability as a psychic ability one can turn on/off at will solves many storytelling problems.
