Since the trend these days is in having many changes/reboots to characters are there any characters which you will follow and pick up no matter what/when they appear with a new series? Heroes that you adore or enjoy enough to invest in time and time again hoping for the best? For myself anymore most of the big names just don't feel the same and I have little interest in them on a regular basis. I may pick up the occasional issue or run of issues for a particular story that may catch my eye or wait for a TPB to cheaply see what they are up to. Many of the team series don't carry heroes I want to read about. But there is a short list of heroes of which I will at the very least start up with a new series to see if it's worth my interest and effort to follow.
DC: The Flash, Hawkman, Metamorpho, Adam Strange, Doom Patrol, JSA, the Demon, Mister Miracle, Firestorm, Legion of Superheroes.
Marvel: Iron Fist, Shang Chi, Captain Britain, Deathlok, Heroes for Hire/Powerman & Iron Fist, Fantastic Four, Avengers, Invaders, Hercules.
Independents: Nexus, Grimjack, Tarzan, John Carter, Doc Savage, Flash Gordon, The Shadow.
Of course there are probably others I have forgotten from the list. But you get the general idea. Who do you follow and keep up with?

Punisher, Conan, Moon Knight and Swamp Thing.
I would throw Batman into the mix, but I was turned off by Snyder's incredibly convoluted run.
Tried jumping back in with Rebirth and Tom King taking over but I ended up dropping it after the first 6 issues.

None. Following characters is a great way to spend money on crappy comics. I'll follow creators who have proven themselves. And I'll buy books if they are well reviewed or look interesting. But it's been a long time since I've bought a book because it has character X in it.

I used to be able to say Iron Man, but not anymore. I'll try most comics if the feature a character I generally enjoy, but if it's a crappy writer sometimes not even that.

I would've said Daredevil but I'm not feeling the current series. Haven't read it, but I'm pretty down on Marvel the last few years.
Thor would be in that same category. I read the first arc of Aaron's title and despite the art being beautiful, it turned me off.

Short answer: None. The winning combo for me is characters I like by creators I like but nothing is ever an automatic buy for me nowadays.

Well with me I don't buy comics anymore cause I'm older now, and married with responsibilities. However since I work at the public library I will borrow the latest graphic novels so I can stay in touch with what is going on. Right now I'm into Rebirth with the Superman & Batman titles.
Like I said I don't buy them anymore. I still love comics but sadly there comes a point in every comicbook collectors life when you have to stop collecting.

None. I'd rather not read comics featuring characters I like than read bad comics featuring them. Life is too short to read bad comics for any reason, especially out of some misguided sense of loyalty or completionism. If a new title featuring a character I like is announced, I'll take a look at who the creative team is and some previews to see if it might appeal to me, but if I don't like what I see, I'm not buying.
Creators on the other hand, there are some I will follow from project to project just about no matter what they do. I may stop buying a title if I don't groove to it, but I will almost always give their books a shot. Of those still living, this would include Brubaker, Jeff Smith, Terry Moore, Druillet, and a handful of others. There are some who this only applies to their creator owned stuff and not projects they do for Marvel and DC, these include Lemire, Remender, Warren Ellis, Greg Rucka, Colleen Doran, and others.
I am much more confident of getting comics I like from creators with proven track records I have enjoyed than with characters who may be done by anyone Marvel or DC can afford to tap a keyboard or hold a pencil if they so choose. And at the price of comics today, I am going to invest my resources and time into books I am more likely to enjoy than not.

Yes, but what if the Hernandezes somehow lost control of their creation and the new owners assigned Geoff Johns and Jim Lee to make it more in line with what fans want to see?

It's hard for me to pick which of his works I like best, but it would probably have to be one of these : or The man is good ! and has some really high caliber work out there. Gotta say I haven't been disappointed in any of his work that I've come across yet.
